Organic vineyard practices, and rigorous winemaking techniques make this possible. Aromas of summer fruits on a slightly herbaceous backdrop. Full-bodied and robust on the palate, will stand up to truffle and oily dishes. PRODUCER PROFILE Settimo Pizzolato is the fifth generation of grower at the estate, a man full of charisma and innovative wisdom. The vines at the Pizzolato estate are on pebbly banks of river deposit, which are irrigated by concrete channels that were put in in the 1950s during Italy's reconstruction post-war. Settimo also has a handful of neighbouring contracted growers that he's worked with for years, all of whom farm organically, and all to his exacting standards. Behind the wines, there is a mind that constantly wants to improve in terms of winemaking, sustainability and preparation for the future. VINEYARD & VINIFICATION Fermentation is activated with selected yeasts, low producers of sulphur dioxide, and takes place on the pomaceat at a controlled temperature of 25°C for a week.
