Assyrtiko Thalassitis 2025

75cl / 13% - From Santorini comes this stunning example of Assyrtiko, the island’s indigenous variety. Harvested from old vines on volcanic soils, whose fruit balances full flavour with high acidity. Unoaked, to preserve its freshness and with four months in stainless steel on its lees, with regular bâtonnage to enhance texture and complexity. Bone dry, with powerful minerality enlivened by delicate lemon zest and floral notes. A refreshing, crisp finish.
